If all they continue to offer is non-upgradable configurations, people are going to pass on buying new laptops and just keep using older upgradable hardware they already have or can buy refurbished. I already kind of d

No, this is a best case for them, because people will buy more laptops when the ram prices fall. It's a win-win.
