Came across packages where the PLIST varies depending on the options
chosen at build time.

Unless I am missing something, I wasn't able to find a way to specify
PLIST entries that are subject to some options.

Is there any way or practice to deal with this situation?

When searching, I found that FreeBSD has such mechanism:
