But Honda's ICUs are so slow to start that you're often a long way down the road before this screen even appears, and then you have to take your eyes off the road to press the OK button before car's systems become fully usable!

It is like the joke about Braille keys on a drive up ATM. It's part not wanting to get sued and part not wanting to vary the user interface to better match the application.
What I find annoying is the inability to adjust the navigation while driving. It's not that I'm doing this while driving, it's that the passenger is also locked out. I don't run into this much myself as my vehicle doesn't have a built-in navigation, I use my iPhone for that and it serves me very well. It's when I'm a passenger or driver in someone else's vehicle and I'm helping or need help in navigation. Most often I give up and use my phone and maybe try to plug it into the dash for power and using the in-dash speakers for clearer audio.
Most vehicles support CarPlay and similar means to connect a smart phone or tablet computer, which means less distraction due to familiarity and/or voice command capability. That doesn't fix controls for HVAC or other vehicle functions, though I recall reading something about Apple working on integrating that into CarPlay somehow.
There's not likely to be any effort to fix the one-size-fits-all silliness of in-dash electronics. Maybe automakers will give up on a lot of the touch screen stuff and expect people that want that to bring their own iProduct for that, and have physical controls for the HVAC, radio (because Congress is requiring a radio, remember?), and so on. If they standardize on that then there's a cost savings that way. The "nag screens" can still be in the digital screen where we used to have physical gauges.
Then that gets to complaints on a LED screen than physical gauges. I'm fine with the screen so long as they simulate moving needles and such like on a physical gauge as it requires less "mental bandwidth" than a number. Put a number there too so I can get an accurate read if I need it.

Mine I can control the NAV with voice commands, native. Even without using Android Auto or CarPlay. Can set destination, options, cancel, etc. In addition to touchscreen.

Mine isn't. So it depends on what vehicle you pick. Part of my car shopping involved a LOT of such examination/testing.

Well, maybe it was a mistake, but I decided to try Wireless Android Auto on the Ariya today. Have never used it before. Seems to work, will have to play with it.
So, I guess, in a way, since the phone has AI stuff, and I connected it to the car, which does not, I have kinda sorta contaminated the car with AI now.

I've seen people pull forward so people in the back seat can use an ATM. I've also seen people hop out of the far seat and use them. The latter is more difficult, but both are doable by blind people, so this falls into a candidate for the Ig Nobel Prize.
