California Retail Food Code (CalCode)

​The goal of the Food Protection Program is to ensure that the food sold and served in Sacramento County is safe, wholesome, and produced under sanitary conditions.

Specialists enforce the requirements contained in the Retail Food Code which is part of the California Health and Safety Code. It is modeled after the FDA "food code" which is based on the most current scientific knowledge of safe retail food handling practices  .

July 1, 2007 was the implementation date for the new retail food law for California. Refer to the documents below for information about how the law is implemented here in Sacramento County, and differences between the new law (Cal Code) and the previous law (CURFFL).
