Potassium erythorbate (C₆H₇KO₆)^[1] is a food additive. Chemically, it is the potassium saltoferythorbic acid. As an antioxidant structurally related to vitamin C, it helps improve flavor stability and prevents the formation of carcinogenic nitrosamines.
