A carrot bread with raisins

Carrot bread is a quick bread,[1]oryeast-leavened bread, that uses carrots as the primary ingredient.[2] It may be prepared with grated,[3][4] shredded carrots, or carrot juice.[2] Baking times can vary depending on the amount of juice in the carrots used,[5] and it may be a moist bread.[6] Carrot bread may have an orange color derived from carrot juice[7] or carrots used.

Additional ingredients used in the preparation of carrot bread may include zucchini (although zucchini itself can be made into zucchini bread),[8][9] buttermilk, eggs,[5] milk, brown sugar, cinnamon, nutmeg,[1][10] walnuts,[6][11] ginger[11] and raisins.[12] Carrot bread can be prepared as a sourdough and/or multigrain bread.[9] It may eaten plain, served with butter,[13] or topped with an icing[14] or glaze. Carrot bread can be served as a means to increase vegetable intake in diets.[12]
