The name is Chavacano and Philippine Spanish for "toasted boiled rice." It is sometimes differentiated as "Spanish-style fried rice". It is usually served in Chinese Filipino restaurants in major Spanish-era cities like Manila, Cebu, Zamboanga, and Iloilo.
