Other sources I have seen, including the French Wikipedia article on『Sauce béarnaise』and the 2019 Phaidon book "Signature Dishes That Matter", give this guy's name as Jean-Louis-François Collinet, rather than Jean-Louis Françoise-Collinet. On sight, this seems somewhat more plausible to me; also, as far as I can see, the only one of the references given that uses the current name form is just a blog post, whereas the French book by Boulet that is also referenced, uses the three-given-names-and-one-surname form.
