Regarding Brown meat, citations needed[edit]

Brown crab meat is primarily the crab's hepatopancreas, or digestive gland. It can also include associated fat deposits and the crab's gonads and roe. In the United states, where Dungeness and Blue crab or more commonly eaten, this is often referred to as 'crab butter.' 'Brown meat' seems to be a British term, referring to part of the brown, or edible, crab, Cancer Pagurus. I found one document that recommended restricting consumption of brown meat, as it can have highly elevated levels of cadmium, 100 times as much as the crab's muscle tissue (white meat). As the brown meat provides the crab's liver function, it is likely to accumulate other toxins and heavy metals as well.
